ALBORELLE in CARPIONE

Is a traditional dish from the Lecco region, known for its unique preservation method that combines frying the small fish with a marinade made of vinegar, white wine, vegetables, and aromatic herbs. The fish, once fried, is immersed in this tangy marinade, allowing it to absorb the flavors and be preserved for later use. The dish is often stored in jars, making it a convenient item for preserving at home and keeping refrigerated after opening.

AGONI in CARPIONE Medium or large jar

Agoni, the blue fish caught in the waters of our lake, fried and preserved in the traditional carpione marinade: a sweet and sour mixture made with vinegar, white wine, vegetables, and aromatic herbs.
MEDIUM size – Suitable for 3/4 people (8-10 agoni), easily stored in your pantry and kept in the refrigerator after opening.
LARGE size – Suitable for 6/8 people (18-20 agoni), perfect for special occasions, a wonderful gift idea.

MIXED LAKE FISH IN CARPIONE

A mix of lake fish fillets, a variety of species (agone, pigo, perch, whitefish, trout, pike, zander depending on the season’s catch), fried and preserved in the traditional carpione marinade: a sweet-and-sour mixture of vinegar, white wine, vegetables, and aromatic herbs.
Available in a size suitable for 4/6 people, conveniently stored in your pantry and kept refrigerated after opening.

The fish from our lake, less prized but more flavorful, expertly filleted and cooked in the traditional way with the addition of cherry tomatoes, wine, onion, carrots, celery, bay leaves, salt, and oil.
It can be conveniently stored in the pantry and used to dress pasta by adding a little cooking water.

carrot's KETCHUP

A delicate ketchup, perfect for accompanying fried foods, but also cheese, fish, and grilled vegetables… Homemade: carrots, apple juice, sugar, honey, vinegar, Worcestershire sauce, salt. Great for a healthy alternative in everyday dishes, perfect for impressing friends when served alongside a barbecue with company.

Pepper Chutney

A soft, sweet and sour jam, a sauce made from peppers and tomatoes slowly cooked with vinegar and sugar. The perfect accompaniment for grilled fish, white meats, or for steaming dishes.

Orange and Cinnamon Jam

A jam made with oranges and cinnamon, perfect for pairing with grilled fish, white meats, and cheeses.

Red Onion and Balsamic Vinegar Jam

The classic red onion and balsamic vinegar jam, where the sweetness and crunchiness of the red onion are perfectly preserved by the caramelization of sugar and balsamic vinegar. In our opinion, it’s a perfect pairing with… everything!

Smoked Salt: Licorice and Citrus

Our Salts: Smoked Salt with Beech Wood Chips.
Delicately scented, it releases its fragrance on hot dishes. The citrus version is particularly suitable for grilled fish, but also for steamed dishes. The licorice variant is surprising, perfect for seasoning even simple steamed vegetables.
